Sprinkle in 4 tablespoons of the water, a little at a time, tossing with a fork until the flour is moistened and the pastry begins to hold together. Add more ice water, 1 teaspoon at a time, as needed. Gather the pastry together, divide it into two halves, and shape each half into a disk. Wrap each disk in plastic wrap and refrigerate it for 20 to 30 minutes or overnight.
