Ingredients
- 1 to 1 1/2 pounds lean ground beef
- 1 tablespoon vegetable oil or butter
- 1 medium onion, chopped
- 1/4 cup chopped green bell pepper or red bell pepper
- 2 teaspoons kosher salt
- 1 or 2 teaspoons brown sugar, optional (I used 2 drops of liquid sucralose)
- 1 teaspoon chili powder
- 1/4 teaspoon freshly ground black pepper
- 1 1/2 teaspoons Worcestershire sauce
- 2 cans (14.5 ounces each) diced tomatoes
- 1/4 cup ketchup
- 2 cups riced cauliflower, cooked until tender*
Instructions
- Melt the butter or heat the oil in a heavy skillet over medium heat. Add the ground beef and cook while stirring and breaking up until the beef is no longer pink.
- Add the chopped onion, green bell pepper, salt, brown sugar, chili powder, pepper, and Worcestershire sauce. Continue cooking until onion is tender.
- Add tomatoes and ketchup; simmer for 10 minutes.
- Add the cauliflower “rice” and heat through.
Notes
*Use frozen steamed or rice a small head of cauliflower in the food processor or with a box grater. Steam in a small amount of water or following package directions until tender.
