Curried Chicken Skillet Dinner

print This easy, flavorful chicken with curry seasonings includes the rice and peas -- a meal in one skillet! Serve this with crusty bread or simply make a tossed salad to go with the dish.

Cook Time: 25 minutes
Total Time: 35 minutes



  1. In a small bowl or cup combine brown sugar, curry powder, mustard, pepper, and salt; sprinkle 1 tablespoon of the seasoning mixture over chicken, tossing to coat. Reserve remaining seasoning mixture.
  2. In a large nonstick skillet bring chicken broth, orange juice, rice and the remaining seasoning mixture to a boil. Add chicken and reduce heat; cover and simmer 15 minutes.
  3. Stir in peas; cover and simmer 10 minutes longer, or until liquid is absorbed.
Serves 4.
