Corn Muffins

Serve these corn muffins with beans or greens or your favorite chili.

Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes


Instructions:

  1. Heat the oven to 425 F.
  2. Grease and flour a 12-cup muffin tin.
  3. Sift flour then measure; add baking powder, salt and sugar, then sift again. Add cornmeal and mix well.
  4. Combine eggs, milk, and melted butter; add to the flour mixture, blending just until ingredients are moist.
  5. Bake in the preheated oven for about 25 minutes.
