  • 2 cups cooked sweet potatoes
  • 1/4 cup brown sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoons ground nutmeg
  • 1/2 teaspoon fine sea salt
  • 1 teaspoon vanilla extract
  • 1 large egg, lightly beaten
  • 3 tablespoons milk
  • 1/4 cup chopped pecans
  • 1/2 cup miniature marshmallows

Instructions

Preheat the oven to 350 F and butter a small baking dish (about 1 1/4 to 1 1/2-quart size).

Mash the sweet potatoes in a large bowl. Add the brown sugar, cinnamon, nutmeg, sea salt, and vanilla; mix well. Add the egg and milk and mix until well blended.

Transfer to the buttered baking dish and top with the pecans.

Bake for 15 minutes. Remove the casserole to a rack and top with marshmallows.
