1/2 cup chopped green bell pepper (or a combination of red and green)
2 cups cheddar jack cheese
10 large eggs
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper

Instructions
Gather: Measure the ingredients and have everything at hand.
Prepare the Oven and Baking Dish: Heat the oven to 375 F (190 C) and grease a 13-by-9-inch baking dish.
Sauté: Heat the oil in a large skillet over medium heat. Add the chorizo and cook for 4 minutes without disturbing. Add the onion and peppers and sauté, stirring frequently, for 4 to 5 minutes or until the meat is no longer pink and the onions are softened.
Layer the Chorizo and Cheese: Transfer the chorizo mixture to the prepared baking dish and top with the cheese.
Finish the Prep: Combine the eggs, chili powder, cumin, salt, garlic powder, and black pepper in a mixing bowl. Beat with an electric mixer or whisk until smooth. Pour over the cheese layer. Pour over the cheese and sausage filling.
Bake: Transfer the baking dish to the oven; bake for 20 to 25 minutes or until set.
Serve: Cut into small squares and serve with salsa and garnishes.
