Remoulade Sauce
1 cup mayonnaise
2 tablespoons finely chopped cornichon or dill pickle relish
1 1/2 teaspoons finely chopped capers
1 tablespoon lemon juice
1 tablespoon spicy brown mustard or Dijon

1/2 teaspoon ground paprika

Instructions
Combine the ground beef, ketchup or barbecue sauce, and grill seasoning. Form the beef mixture into 12 small burgers.
Grill or pan-grill over medium-high heat for about 5 minutes on each side, or until done as desired.
Meanwhile, in a bowl, combine the mayonnaise, cornichon or relish, chopped capers, lemon juice, mustard, parsley, and paprika. Taste and add hot sauce and salt, as needed. Cover and refrigerate the sauce until serving time.
Serve the burgers on split dinner rolls or slider buns with remoulade sauce and toppings of your choice.
