Use a rotisserie chicken or leftover cooked chicken or turkey to make this easy skillet chicken and rice.

  • 6 tablespoons butter
  • 1/2 cup chopped onion
  • 1/4 cup chopped celery
  • 2 to 3 cups diced cooked chicken
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon salt, plus more, as needed to taste
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon dried leaf thyme, crumbled
  • 1 cup long grain rice
  • 2 1/2 cups chicken broth
  • 1/2 cup seeded and diced tomatoes

Instructions

  1. Heat the butter in a large skillet or saute pan over medium ehat. Add the onion, celery, and mushrooms; cook for 4 to 5 minutes, stirring constantly.
  2. Add the chicken, salt, pepper, garlic powder, and thyme. Add the rice, chicken broth, and tomatoes; stir to blend.
  3. Reduce the heat to low, cover the pan, and simmer the mixture for 25 to 30 minutes.
  4. Taste and adjust seasonings.
