This quick vanilla snack cake is remarkably fast and easy to throw together and bake! The 8-inch cake is finished with a delicious melted chocolate chip frosting.
1/4 cup finely chopped pecans or walnuts, optional
1 egg
1/3 cup semisweet chocolate chips
Instructions
Preheat oven to 350 F and spray an 8-inch square baking pan with cooking spray.
Add the flour, sugar, baking powder and salt to the pan.
In small bowl, whisk together egg and vanilla.
Make 2 small wells in the flour mixture; pour oil in one and egg and vanilla mixture in other.
Add the milk and stir until well blended. Fold in the pecans, if using.
Bake the cake in the preheated oven for 25 to 35 minutes, or until a wooden pick inserted in center comes out clean.
Remove the cake to a rack and immediately sprinkle the chocolate chips over the top. Let the chocolate chips stand for 2 minutes, until softened, then use a spatula or knife to swirl them over the cake, creating the frosting.
