Soft, fluffy peanut butter cupcakes that come together in minutes. Perfect with chocolate or vanilla frosting and a sprinkle of toppings!

  • 1 stick (4 ounces) butter, room temperature
  • 1 1/3 cups brown sugar, packed
  • 1/2 cup peanut butter
  • 2 eggs, beaten
  • 2 cups all-purpose flour (9 ounces)
  • 1/2 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 3/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Prep the oven and pan.
    • Preheat the oven to 350°F and grease and flour 18 cupcake cups or line with cupcake papers.
  2. Make the batter.
    • In a mixing bowl, using an electric mixer, beat the butter, brown sugar, and peanut butter until light and fluffy. Beat the eggs and vanilla into the creamed mixture.
    • In another bowl, combine the flour, salt, and baking powder; mix with a spoon or whisk to blend.
    • Add the dry ingredients to the first mixture, alternating with the milk. Blend until smooth.
  3. Bake the cupcakes.
    • Fill the prepared cupcake cups about 2/3 to 3/4 full. Bake for 23 to 27 minutes, or until a wooden toothpick inserted in the center comes out clean.
