Peanut Butter Cupcakes

Finish these fabulous peanut butter cupcakes with chocolate or vanilla frosting and sprinkles. It’s a recipe you’ll use again and again!

Ingredients

  • 1 stick (4 ounces) butter, room temperature
  • 1 1/3 cups brown sugar, packed
  • 1/2 cup peanut butter
  • 2 eggs, beaten
  • 2 cups all-purpose flour (9 ounces)
  • 1/2 teaspoon salt
  • 2 1/2 teaspoons baking powder
  • 3/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Grease and flour 18 cupcake cups or line with cupcake papers.
  2. In a mixing bowl with an electric mixer, beat the butter with the brown sugar and peanut butter until light and fluffy. Beat the eggs and vanilla into the creamed mixture.
  3. In another bowl, combine the flour, salt, and baking powder; mix with a spoon or whisk to blend.
  4. Add the dry ingredients to first mixture alternating with the milk. Blend until smooth.
  5. Fill the prepared cupcake cups about 2/3 to 3/4 full.
  6. Bake at 350 F for 25 to 27 minutes, or until a wooden toothpick inserted in the center comes out clean.
