1 1/2 pounds fresh okra, washed and sliced into 1/2-inch thick rounds
4 large tomatoes, seeded and diced
1 1/2 teaspoons kosher salt, or to taste
1/4 teaspoon freshly ground black pepper, or to taste
Pinch crushed red pepper flakes, optional
Chopped fresh parsley, optional
Instructions
Arrange the bacon in a large skillet and place it over medium heat; cook until crisp. Using a slotted spoon, transfer the bacon to paper towels to drain.
Add the chopped onions to the skillet and cook for 5 minutes or until translucent. Add the okra, tomatoes, salt, pepper, and crushed red pepper if using; stir to combine and simmer for 20 minutes or until the okra is tender. Taste and adjust the seasonings.
Garnish with parsley if desired, and serve immediately.
