12 to 16 ounces smoked sausage, your favorite variety, thinly sliced
2 bay leaves
2 cups chicken broth
1 large onion, diced
1 cup diced carrots
1/2 cup diced celery
2 cloves garlic, minced
1 can (14.5 ounces) diced tomatoes, undrained
1 teaspoon kosher salt, or to taste
freshly ground black pepper, to taste
Instructions
In a 4 to 6-quart slow cooker, combine the lentils with sausage, bay leaves, chicken broth, onion, carrots, celery, and garlic. Cover and cook on LOW for 5 to 6 hours, or until the lentils are tender.
Add the tomatoes and taste for seasoning. Add salt and pepper, as needed, and continue cooking for 1 to 2 hours longer.
