This simple garlic butter shrimp dish makes a lovely meal with rice or pasta. Fresh lemon juice adds bright flavor to the shrimp while parsley adds to the color.
Rinse the shrimp. Remove the shells. With the tip of a sharp knife, make a shallow cut down the back of the shrimp; remove the veins. Rinse well and set aside.
Melt the butter in a large skillet over medium heat. Add the minced garlic and cook for about 1 minute, stirring constantly. Add the shrimp and cook until opaque, turning frequently. Add the lemon juice and heat through.
Sprinkle with parsley and serve with rice or angel hair pasta.
