These old-fashioned sugar cookies are chewy and delicious. The cookies are rolled in sugar and then gently flattened before baking.

Ingredients

  • 1 cup butter, softened
  • 1 1/2 cups granulated sugar, plus more for rolling
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Prepare the Oven and Pan: Position a rack in the center of the oven and preheat to 350°F. Line baking sheets with parchment paper.
  2. Make the Cookie Dough: In a mixing bowl with an electric mixer, beat the granulated sugar with the butter until light and fluffy. Add the egg and vanilla; blend until well combined.
    In another bowl, combine the flour, baking powder, and salt. Stir to blend.
    With the mixer on low speed, mix the dry ingredients into the creamed mixture.
  3. Shape: Scoop portions of dough and gently roll them into smooth, even balls. Coat in extra sugar—regular granulated sugar, sparkling sugar, or pourable brown sugar all work well.
  4. Bake: Arrange the cookie dough balls on the baking sheets, spacing them about 2 1/2 inches apart. Bake for 12 to 14 minutes, or until the bottoms have lightly browned.
