2 1/2 pounds sweet potatoes, about 3 to 4 large sweet potatoes
1/2 cup packed brown sugar
4 tablespoons melted unsalted butter
Dash table salt
Instructions
Heat the oven to 325 F and lightly butter a 2-quart baking dish.
Peel and slice the sweet potatoes into 1/2-inch thick rounds and place them in a saucepan. Cover the sweet potatoes with water and bring to a boil. Reduce the heat to medium and cook just until tender, about 10 to 12 minutes. Drain well.
Layer the sweet potatoes in the baking dish.
Combine the brown sugar, melted butter, and salt; spoon over the sweet potatoes.
Cover the baking dish tightly with foil and bake for 20 minutes, until nicely glazed.
