Basic Corn Fritters

These deep-fried fritters are always a hit! Serve them with golden syrup, maple syrup, or warm preserves.

Ingredients

  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup melted butter
  • 1 1/2 cups corn kernels (frozen-thawed, canned and drained, or fresh)
  • Powdered sugar or syrup, for serving
  • Vegetable oil, for frying

Instructions

  1. In a large, deep skillet or kettle, heat about 2 to 3 inches of vegetable oil to 365 F. Alternatively, use an electric deep fryer.
  2. In a bowl, combine the flour, baking powder, salt, and sugar. Stir and set aside.
  3. In a mixing bowl, whisk the eggs with the milk and melted butter until well blended. Add the flour mixture and stir to combine.
  4. Fold the well-drained corn into the batter.
  5. Using a tablespoon or small scoop, drop the fritter batter into the hot vegetable oil. Fry the fritters for about 4 to 5 minutes, or until golden brown. Work in batches of about 5 to 6 fritters, depending on the size of your pan or fryer.
  6. If desired, keep the fritters warm in a warming drawer or oven (about 170 F to 200 F) as you fry subsequent batches.
  7. Sprinkle with powdered sugar or serve with syrup.

Notes

Ensure the oil is at the correct temperature when ready to add the fritter batter. If you aren’t using an electric deep fryer, a deep-fry thermometer is recommended. Plus, when the oil is at the correct temperature, less fat is absorbed.
