Zucchini, Summer Squash, and Tomato Skillet

Garden fresh zucchini and summer squash team up with tomatoes and seasonings in this tasty skillet side dish.

Total Time: 25 minutes
- Slice the zucchini and summer squash lengthwise into quarters and then slice each quarter thinly.
- Heat the olive oil in a large skillet over medium heat; add zucchini, summer squash, and garlic and cook for about 10 to 15 minutes, or until tender, stirring frequently.
- Meanwhile, combine the basil, oregano, thyme, parsley, and quartered tomatoes in a bowl.
- When squash is tender add the tomato mixture to the pan. Continue cooking, stirring, for just a couple of minutes, until hot and well blended.
