Zucchini, Summer Squash, and Tomato Skillet

Garden fresh zucchini and summer squash team up with tomatoes and seasonings in this tasty skillet side dish.

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes



  1. Slice the zucchini and summer squash lengthwise into quarters and then slice each quarter thinly.
  2. Heat the olive oil in a large skillet over medium heat; add zucchini, summer squash, and garlic and cook for about 10 to 15 minutes, or until tender, stirring frequently.
  3. Meanwhile, combine the basil, oregano, thyme, parsley, and quartered tomatoes in a bowl.
  4. When squash is tender add the tomato mixture to the pan. Continue cooking, stirring, for just a couple of minutes, until hot and well blended.

Makes 4 to 6 Servings
