This French toast features peaches caramelized in butter and brown sugar. Use rich bread, such as brioche or challah.

  • 4 medium peaches, peeled and pitted
  • 6 tablespoons butter (divided use)
  • 4 tablespoons brown sugar, packed
  • 3 tablespoons heavy cream
  • 4 large eggs
  • 3/4 cup milk
  • 2 tablespoons granulated sugar
  • 8 thick slices brioche-style bread or a similar rich loaf bread
  • syrup for serving, optional

Instructions

  1. In a large skillet over medium heat, melt 4 tablespoons of the butter. Add the brown sugar and stir until blended. Add the peaches to the skillet and cook until the peaches are caramelized and syrupy, stirring and turning frequently. Stir in the heavy cream.
  2. Beat the eggs with the milk and granulated sugar. Dip the bread slices in the egg mixture one at a time, letting the mixture soak into the bread.
  3. In a large skillet or griddle, melt 2 tablespoons of butter over medium heat.
  4. Add the soaked bread slices and cook for about 3 minutes on each side, or until nicely browned.
  5. Serve the French toast hot with the warm peaches and a drizzling of maple syrup, if desired.
