Ingredients

Scale
  • 1 cup flour
  • 1 teaspoon baking powder
  • dash salt
  • 4 ounces butter, melted and slightly cooled
  • 1 cup packed light brown sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 large egg
  • 8 ounces chopped dates
  • 1/2 cup chopped pecans
  • 2/3 cup flaked coconut

Instructions

Grease and flour a 9-inch square baking pan. Heat oven to 350°.

In a bowl combine the flour, baking powder, and salt.

In a mixing bowl, beat the brown sugar and butter together until smooth. Beat in the vanilla and egg until well blended. Stir in the flour mixture just until moistened, then stir in the dates, pecans, and coconut. Spread/pat into the prepared baking pan.

Bake for about 25 minutes, or until golden brown.
