Ingredients

  • 1 cup butter, softened
  • 1/2 cup powdered sugar, plus more for coating the cookies
  • 1/4 teaspoon salt (scant)
  • 1 1/2 teaspoons vanilla extract
  • 2 cups all-purpose flour, 9 ounces
  • 1 1/2 cups finely chopped pecans

Instructions

  1. Preheat the oven to 350 F.
  2. Line baking sheets with parchment paper or leave it ungreased.
  3. In a mixing bowl with an electric mixer, cream the butter and 1/2 cup confectioners’ sugar until light.
  4. Add salt, vanilla, flour, and chopped pecans to the first mixture; blend well.
  5. Cover the bowl and refrigerate for about 1 hour.
  6. Shape the chilled dough into 1-inch balls and place them on the prepared baking sheets.
  7. Bake in the preheated oven for 11 to 14 minutes.
  8. Cool on racks.
  9. Sift about 1/2 cup of powdered sugar into a bowl and roll the cookies to coat.
