Red Pepper Pasta
This quick and easy pasta is made with red bell peppers and tomato puree, along with garlic and pasta. It's an easy, basic pasta sauce recipe, perfect for any day of the week. Serve this pasta with meatballs or top it with cheese and serve with a tossed salad for a meatless meal.

Total Time: 30 minutes
Place a large saucepan of water over medium high heat; bring to a boil. Heat oil in a skillet over medium heat and saute bell pepper and garlic for about 10 minsutes, stirring occasionally. Add pasta to boiling water and cook about 9 to 10 minutes, or follow package directions.
Meanwhile, spoon tomato puree and sauteed vegetables into a food processor or blender and process until smooth. Add salt and pepper to taste. Drain pasta and toss with the red pepper sauce.
Serves 2 to 3.
