Mexican Corn Casserole

Pepper cheese and a little hot pepper sauce help to flavor this tasty corn casserole. This Mexican corn casserole makes a great side dish to any meal.

Position a rack in the center of the oven, and preheat to 375 F. Lightly butter a round 2-quart baking dish.

In a medium saucepan, combine the corn with peppers and the cream-style corn; bring to a simmer over medium heat. Transfer the corn mixture to a medium bowl.

Whisk the eggs in a medium bowl; stir in the corn mixture until well blended. Add the flour and sugar, blending well, then stir in 1 cup of the cheese, the cream, green onions, garlic, and hot pepper sauce. Spread evenly in the buttered baking dish.

Bake until the top is lightly browned and the casserole is set in the center, about 50 minutes. Sprinkle the top with the remaining 1/2 cup of cheese, the continue baking until the cheese is melted, about 5 minutes longer.

Remove from the oven and let stand 5 minutes before serving.

Serves 4 to 6.
