Zucchini and Squash Skillet With Garlic and Peppers

Take advantage of the season's abundant zucchini and peppers in this flavorful vegetable skillet. This is a summer squash and zucchini recipe with garlic and peppers and other ingredients.

Cook Time: 20 minutes
Total Time: 40 minutes



Heat oil in a large skillet over medium heat. Add paprika and stir to blend into the oil. Add scallions and garlic and saute for 2 minutes.

Add all other ingredients, partially cover, and sauté over medium low heat for 15 to 18 minutes, or until vegetables are tender, stirring occasionally.

Serves 4 to 6.
