Colorado Potatoes

print These Colorado style potatoes are cooked with diced bacon, onion, bell pepper, and corn.

Prep Time: 20 minutes
Cook Time: 35 minutes
Total Time: 55 minutes



  1. Cut bacon into bite-sized pieces and fry in a large heavy skillet until cooked but not crispy. Drain off all but a few tablespoons of the bacon grease. Remove the bacon to paper towels to drain.
  2. Add onion, bell pepper and potatoes. Add salt and pepper.
  3. Cook until potatoes are almost done and then add corn.
  4. Continue to cook until potatoes are tender.
Serves 6.
