Green Chile and Red Bean Soup

print This tasty soup is a spicy combination of beans, chile peppers, and vegetables. The soup can easily be made vegetarian by using vegetable broth instead of chicken broth.

Instructions:

  1. Saute onion and peppers in olive oil until onions are transparent.
  2. Add chicken stock and remaining ingredients. Simmer for 2 hours.
  3. Serve immediately or cool and refrigerate overnight.
  4. Reheat soup to serve.
  5. Serve with tortilla chips.
