Green Chile and Red Bean Soup

This tasty soup is a spicy combination of beans, chile peppers, and vegetables. The soup can easily be made vegetarian by using vegetable broth instead of chicken broth.
- Saute onion and peppers in olive oil until onions are transparent.
- Add chicken stock and remaining ingredients. Simmer for 2 hours.
- Serve immediately or cool and refrigerate overnight.
- Reheat soup to serve.
- Serve with tortilla chips.
