Baked Potato Soup

This simple potato soup is loaded with flavor. Sour cream, green onions, and bacon take it to the next level. Serve the soup with crusty bread or biscuits or serve it along with sandwiches or a salad.

Instructions:

  1. Wash potatoes and prick several times with fork; bake at 400 F for 1 hour or until done. Let cool. Cut potatoes in half lengthwise, then scoop out the potato; set aside.
  2. Discard the potato skins.
  3. Melt the butter in a heavy saucepan over low heat; add the flour, stirring until smooth. Cook for one minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
  4. Add the potato, salt, pepper, 2 tablespoons of green onions, about 1/2 cup of the fried crumbled bacon, and 1 cup cheese. Cook until thoroughly heated; stir in sour cream. If the soup is too thick, add a bit more milk. Taste and adjust seasonings.
  5. Serve the potato soup topped with remaining onion, bacon, and cheese.
