This delicious cheesecake is a cinch to prepare and bake using a simple purchased pie crust. Or, use a homemade gingersnap crust or cinnamon graham cracker crust.

Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes




Instructions:

Preheat oven to 350 F.

In a large bowl with electric mixer, beat the cream cheese, pumpkin, and brown sugar until smooth and creamy. Add the spices and vanilla; beat until blended. Add the eggs and beat for another minute. Pour into the crust and bake for about 40 minutes, or until the pie is set.

Serve with whipped topping or sweetened whipped cream.
