Bacon and a little onion flavor these leftover mashed potato cakes.

Total Time: 25 minutes
- Add bacon and onions to mashed potatoes. Mix in the beaten egg, salt, and pepper.
- Shape into 6 patties.
- Melt butter in skillet over medium-low heat; cook the potato patties, turning to brown both sides.
