Au Gratin Potatoes

Au gratin potatoes with cheese.


In this recipe, the diced potatoes are lightly cooked, making them quicker to bake in the oven. I like this version because the sauce doesn't break down as it does in so many recipes for au gratin potatoes.

Prep Time: 14 minutes
Cook Time: 26 minutes
Total Time: 40 minutes

Instructions:

  1. Heat the oven to 400 F.
  2. Measure milk into a 2-quart saucepan. Add the potatoes, salt, pepper, and butter. Bring to a simmer, reduce heat to the lowest setting and simmer until almost tender, about 6 minutes. Remove from heat, add cheese, and stir gently until just melted.
  3. Sprinkle flour over the surface, stir gently then pour into a greased 2-quart casserole.
  4. Bake for 20 minutes, until browned.
