Au Gratin Potatoes

In this recipe, the diced potatoes are lightly cooked, making them quicker to bake in the oven. I like this version because the sauce doesn't break down as it does in so many recipes for au gratin potatoes.

Instructions:
- Heat the oven to 400 F.
- Measure milk into a 2-quart saucepan. Add the potatoes, salt, pepper, and butter. Bring to a simmer, reduce heat to the lowest setting and simmer until almost tender, about 6 minutes. Remove from heat, add cheese, and stir gently until just melted.
- Sprinkle flour over the surface, stir gently then pour into a greased 2-quart casserole.
- Bake for 20 minutes, until browned.
