Shrimp Stuffed Tomatoes

Tomatoes are cored then stuffed with a flavorful shrimp salad mixture.

- Chop the shrimp, if large, and combine with celery, lemon juice, seasonings, and lemon juice to moisten.
- Cut out the stem core of a tomato and then, starting at the center of the other end, cut into eighths, not quite through to the bottom. Place on a salad plate lined with greens and spread the wedges out to resemble flower petals. Repeat with remaining tomatoes.
- Fill each tomato "flower" with shrimp salad and serve.
- Accompaniment ideas: corn chips, deviled eggs, pickles, avocado slices.
