Shrimp Stuffed Tomatoes

print Tomatoes are cored then stuffed with a flavorful shrimp salad mixture.

Ingredients:




Instructions:

  1. Chop the shrimp, if large, and combine with celery, lemon juice, seasonings, and lemon juice to moisten.
  2. Cut out the stem core of a tomato and then, starting at the center of the other end, cut into eighths, not quite through to the bottom. Place on a salad plate lined with greens and spread the wedges out to resemble flower petals. Repeat with remaining tomatoes.
  3. Fill each tomato "flower" with shrimp salad and serve.
  4. Accompaniment ideas: corn chips, deviled eggs, pickles, avocado slices.
