Baked Beans with Beer

These baked beans are made with dry beans and both molasses and ketchup, along with a somewhat unusual ingredient: beer.

- Heat the oven to 300 F.
- In a large pot, bring beans and water to a boil; boil for 1 minute then remove from heat. Let stand for 1 hour; drain off water.
- Place beans in a large, non-metallic casserole. Add onions, molasses, ketchup, mustard, salt, and hot pepper sauce; mix well. Tuck diced salt pork or bacon into the beans. Pour beer over all.
- Cover and bakefor 5 to 6 hours, until most of the liquid has been absorbed and the beans are tender.
- After 5 hours, if there is too much liquid in the casserole, remove cover and allow liquid to evaporate during the last hour of cooking.
