Tex-Mex Chicken Salad

  1. In a large bowl, combine the diced chicken , shredded cheese, diced tomato, avocado, and olives. Cover and chill for 20 minutes.
  2. Arrange lettuce evenly on 8 salad plates. Spoon the chilled chicken mixture over each serving.
  3. Top with a dollop of sour cream, salsa, and jalapeno rings, if using.
  4. Sprinkle with tortilla chips.
