Spinach and Mushroom Salad

This simple salad is a combination of fresh spinach, mushrooms, and a little red onion, drizzled with a red wine dressing.

- In a bowl, combine the red wine vinegar, salt, garlic powder, and mushrooms. Let stand for 10 minutes.
- Meanwhile, in a large bowl, toss the torn spinach with olive oil. Add the mushroom mixture and sliced onion; toss to combine ingredients. Sprinkle each serving with Parmesan cheese or pass Parmesan cheese at the table.
