Salsa Meatloaf

This salsa meatloaf recipe makes a nice family meal along with mashed potatoes or a Mexican style rice. The nicely spiced meatloaf is made with your favorite salsa.

Cook Time: 1 hour 15 minutes
Total Time: 1 hour 30 minutes



  1. Preheat the oven to 350 F.
  2. In a large bowl, mix together the ground beef, pork, bread crumbs, egg, and 3/4 cup salsa. Add the lemon juice, brown sugar, parsley, cilantro, salt, chili powder, garlic powder, cumin, and cinnamon. Mix well and pack into a 9x5-inch loaf pan.
  3. Bake the meatloaf for 45 minutes. Spoon the remaining 1/4 cup of salsa over the loaf and return to the oven. Bake for 25 to 30 minutes longer, or until cooked through. The meatloaf should register at least 160 in the center.
