Baked Salmon Tortilla Roll-Ups

These flavorful salmon roll-ups make an excellent and easy meal. Serve this salmon dish with rice or a potato dish for a satisfying everyday dinner.

Total Time: 35 minutes
- Preheat the oven to 375 F.
- Spray a 9-by-13-by-2-inch baking pan lightly with nonstick cooking spray.
- In a bowl, combine the sour cream, eggs, scallions, celery, salmon, and lemon juice. On a tortilla, spread about 1/4 cup of the salmon mixture to within 1/2 inch of the edge. Roll the tortilla up. Repeat with remaining tortillas.
- Arrange the tortillas, seam side down, in the prepared pan. Bake for about 15 minutes, until hot. Serve with salsa and your favorite garnishes.
