Mexican Chicken

print This easy chicken recipe is made with tomatoes, olives, garlic, and mushrooms, along with seasonings. Feel free to use canned tomatoes instead of chopped fresh tomatoes. I like the petite diced tomatoes, and several brands offer them now.

Prep Time: 7 minutes
Cook Time: 1 hour 15 minutes
Total Time: 1 hour 22 minutes



  1. Cook and stir onion in oil in a 10-inch skillet until tender.
  2. Stir in remaining ingredients, except the chicken breasts and mushrooms. Heat to boiling; reduce heat and simmer, uncovered, for 30 minutes.
  3. Place chicken, skin sides up, in a single layer in skillet. Cover and cook over medium-low heat for 30 minutes.
  4. Add mushrooms, cover and cook until chicken is done, about 15 minutes longer.
