Dijon Chicken Breasts

Sour cream and Dijon mustard make up the sauce for these browned chicken breasts.

- Rinse chicken breasts and pat to dry. Put between sheets of plastic wrap and gently pound to about 1/4- to 1/2-inch thickness. Sprinkle lightly with salt and pepper.
- In a large skillet over medium heat melt butter with olive oil until hot and foaming; add chicken breasts. Cook ove, turning once, until chicken is browned and fork tender, about 15 minutes. Remove chicken to a plate; set aside.
- In same skillet add sour cream, milk, and mustard. Continue cooking, stirring constantly, until sauce is smooth and heated through, about 1 to 2 minutes.
- Serve sauce over chicken and sprinkle with the chopped green onions.
