Dijon Chicken Breasts

print Sour cream and Dijon mustard make up the sauce for these browned chicken breasts.

  1. Rinse chicken breasts and pat to dry. Put between sheets of plastic wrap and gently pound to about 1/4- to 1/2-inch thickness. Sprinkle lightly with salt and pepper.
  2. In a large skillet over medium heat melt butter with olive oil until hot and foaming; add chicken breasts. Cook ove, turning once, until chicken is browned and fork tender, about 15 minutes. Remove chicken to a plate; set aside.
  3. In same skillet add sour cream, milk, and mustard. Continue cooking, stirring constantly, until sauce is smooth and heated through, about 1 to 2 minutes.
  4. Serve sauce over chicken and sprinkle with the chopped green onions.
