Penne Pasta and Ham Casserole

This easy penne, cheese, and ham casserole is a simple mixture of cooked pasta, ham, mushrooms, and mozzarella cheese, seasoned with garlic and parsley. Add about 1 cup of white sauce for a saucier mixture, or stir in some steamed peas or mixed veggies.

Cook Time: 25 minutes

Instructions:

  1. Heat the oven to 450 F.
  2. Clean and trim the mushrooms and cut into thin slices.
  3. Put the oil, garlic, chopped parsley, and mushrooms into a saucepan and cook over a moderate heat, stirring and turning occasionally, until mushrooms are tender.
  4. Cut the ham and cheese into small dice.
  5. Cook the pasta until tender but still firm, drain well, and stir in the mushrooms, ham, and mozzarella cheese. Add salt and pepper, to taste.
  6. Transfer the pasta and ham mixture to a buttered 2-quart baking dish. Toss the breadcrumbs with the melted butter (if using) and sprinkle over the casserole.
  7. Bake the casserole for about 8 to 12 minutes, or until the cheese begins to melt and the topping is golden brown.
Serves 4.
