Boil the sweet potatoes in their skins until somewhat tender but still quite firm. Peel and slice into 1/2-inch thick rounds.
Heat oil over medium heat in a large heavy skillet. Brown the pork chops on both sides.
Season with salt, pepper and the herbs. Put the sweet potato slices over the pork chops then place
the pepper rings over the sweet potatoes. Top with the tomatoes. Bring to
a boil, reduce heat to low, cover, and simmer until the pork chops are tender, about 45 minutes.
