Spicy Pork Roast

This easy pork roast is rubbed with a sweet and spicy mixture and roasted to perfection. Serve this roast with mashed potatoes and your favorite side vegetables, or try it with a side of mac and cheese instead of potatoes.

- Mix sugar, chili powder, ground cayenne pepper, oregano and pepper, and rub over the pork roast. Cover and refrigerate 30 minutes.
- Heat the oven to 325 F.
- Place pork, fat side up, on rack in a shallow roasting pan. Insert meat thermometer or oven probe so that the tip is in the thickest part of the pork and doesn't rest in the fat.
- Roast, uncovered, until thermometer registers at least 145 F, about 2 hours.
- Let the roast rest for 15 minutes before slicing.
