Ginger Beef Ribs

Beef ribs are first marinated in a flavorful marinade made with salsa, cilantro, soy sauce, and ginger, along with garlic and other ingredients. The marinated ribs are then grilled to perfection. Serve these grilled beef ribs with potato salad and sliced tomatoes for an easy, tasty meal.

- Trim excess fat from ribs; do not cut ribs into portions; rinse pieces and pat dry.
- Combine remaining ingredients in a large heavy plastic food storage bag; add the ribs, seal and turn the bag to coat ribs well; chill beef ribs for 1 to 2 hours, turning occasionally.
- Take ribs from marinade; put the marinade in a saucepan and bring to a full boil. Set aside. Arrange the beef ribs on a preheated grill over a medium coals. Turn ribs to brown evenly, basting with marinade up to the last 5 minutes of cooking; cook until beef is done to your liking, about 25 to 30 minutes for medium-rare, 35 for medium, and 40 to 45 minutes for well done.
- Cut ribs between the bones to serve in smaller portions.
