Broiled Pond Catfish Fillets

Recipe By : from "Voila!" (Jr League of Lafayette, LA) Ingredients:


Rinse and dry fillets. Season with lemon pepper, garlic powder, red and black pepper. Set aside.
Melt butter in saucepan. Add parsley and green onions. Saute 2-3 minutes. Add seasoned shrimp, cook until pink. Add crabmeat and bread crumbs. Add chicken broth and wine to moisten mixture.
Place fillets in pan lined with foil. Broil in preheated broiler 3 minutes. Turn fillets over. Baste with butter and lemon juice. Spread dressing over each fillet and broil 5 minutes longer.
Mix butter, lemon juice, parsley and garlic powder together. Warm and serve sauce with broiled catfish.
