How to Test Baking Soda and Baking Powder for Freshness

When your cake or cookies fail to rise properly, you might wonder if it's your fault. Your baking powder or baking soda might have been the problem, especially if you don't bake often. If in doubt, you can easily test them for freshness.

Here's How


Add 1/2 cup of hot tap water to a 1-cup measure or small bowl.

Baking Powder: Add 1/4 teaspoon of baking powder to the water. It should fizz or bubble briefly.

Baking Soda: Add 1/4 teaspoon of vinegar to the hot water and then add 1/4 teaspoon of baking soda. It should fizz or bubble briefly.
