Chile Rice Casserole

This rice dish is made with chile peppers, cheese, and sour cream. Feel free to use light sour cream in this recipe.
Prep Time: 20 minutes
Cook Time: 30 minutes plus rice cooking time
Total Time: 50 minutes
- Heat the oven to 350 F.
- In a medium saucepan, bring the water to a boil. Add the rice, cover pan, and simmer over low heat until the liquid is absorbed, approximately 20 to 25 minutes. Let the rice cool.
- Mix the cooked rice with the sour cream and salt. In the bottom of a greased 1 1/2-quartt casserole, spread half of the rice mixture.
- Sprinkle the shredded cheese and chiles over the layer of rice and then top with the remaining rice. Dot with butter and sprinkle with the Parmesan.
- Bake uncovered in the preheated oven for 30 minutes.
