Chile Rice Casserole

This rice dish is made with chile peppers, cheese, and sour cream. Feel free to use light sour cream in this recipe.

Prep Time: 20 minutes
Cook Time: 30 minutes plus rice cooking time
Total Time: 50 minutes



  1. Heat the oven to 350 F.
  2. In a medium saucepan, bring the water to a boil. Add the rice, cover pan, and simmer over low heat until the liquid is absorbed, approximately 20 to 25 minutes. Let the rice cool.
  3. Mix the cooked rice with the sour cream and salt. In the bottom of a greased 1 1/2-quartt casserole, spread half of the rice mixture.
  4. Sprinkle the shredded cheese and chiles over the layer of rice and then top with the remaining rice. Dot with butter and sprinkle with the Parmesan.
  5. Bake uncovered in the preheated oven for 30 minutes.
