Spanish Rice Recipe

This basic spanish rice is topped with Monterey jack cheese before serving, but feel free to use a Mexican cheese blend in this rice. It's a meat-free Spanish rice, loaded with chopped vegetables and flavor.Ingredients:


  1. Heat the olive oil in a large skillet over medium heat. Saute the onion, celery, pepper in the hot oil until the onion is translucent. Add chili powder and cumin. Cook, stirring, for about 1 minute longer; add tomatoes, salt, oregano, and pepper.
  2. Bring the mixture to a simmer and then add the rice.
  3. Top with the shredded cheese and cover, heating just long enough to melt the cheese.
