In a skillet over medium heat, melt butter; add onion and celery. Cook on low heat until the vegetables are tender. Add oysters that have been cut up with scissors and a little oyster juice. Cook for about 5 minutes, until oysters curl.
Remove the pan from the heat and add the bread crumbs, grated eggs, and parsley to season. Add salt and papper to taste. and Moisten with oyster liquid or water.
Mound some of the mixture into oyster shells or spoon into a greased baking dish; sprinkle cracker crumbs on top and dot with butter. Bake at 350 F about 20 minutes
